Much similar to the European Sea Bass, Stone Bass is much larger in size with a darker skin colour and richer texture.
Due to its large size, fillets are usually much thicker and chunkier, perfect for serving as darnes.
We'd recommend serving these with the skin on and crisping it up with oil and salt in a hot pan.
