Description

A kipper is a "fat" herring caught in season and usually served whole, also known as a "breakfast Kipper". (often served in hotels for breakfast).

These Kippers (on-the-bone) are gutted, split along the back, opened flat and salted or brined to reduce the water content. The fish is gently cold smoked giving it the traditionally pale golden colour.

Kipper

Fortunately I noticed that the delivery note highlighted the fact that it was frozen except that by the time it arrived it wasn’t. I might not have known it had been frozen and refrozen it. Not recommended. There were two large kippers but they were plump and quite tasty

These kippers are delicious. They are slightly salty (to be expected with the method of curing), but not overly so. A lovely subtle smokey flavour can be tasted all over the plump and sweet flesh. These are hands down better than those "boil in the bag with a bit of butter" things that supermarkets sell. I`ll definitely be buying these again.

I bought one pack of these kippers expecting one kipper - but there were two.
Of the one I have so far eaten, I don`t recall ever having a kipper that was so plump and juicy with a subtle, not overpowering, smoked flavour.
I definitely recommend these and I`ll be buying them again.
